Happy Hump Day: Sweet Potato Fries

This is a super easy flavor enhancer to any meal. Serve on the side our as the main entrée with any grain. Delicious with a poached egg on top or grilled salmon. For an extra crunch grate parmesan cheese over the sweet potatoes the last two minutes of cooking. Sweet potatoes are packed with vitamin A and C and a terrific source of dietary fiber. If serving as an appetizer, serve with a sriracha mayo and lots of chopped Italian parsley. Enjoy!

Makes 4-6 Servings

Do Ahead: Bake potatoes at 400 degrees for 1 hour or until tender and firm. Over-cooking will make the fries too mushy. 

Ingredients

  • 3 whole baked sweet potatoes (medium large)
  • 1 whole nutmeg (or 1-2 teaspoons ground)
  • 1 – 2 Tablespoon extra virgin olive oil
  • Course sea salt to taste

Directions

Preheated oven to 425 degrees.

  1. Brush both side of potato with olive oil, sprinkle with salt. Grate a generous amount of nutmeg over each potato. Bake on top rack on a baking sheet for 10 minutes on each side. Turn when potato is golden brown and crisp on each side.
